Yellowfin tuna is a more expensive tuna than skipjack. We only use high quality fillets - not chunks or pieces. Our yellowfin is too good for a mayo sandwich! Use as a tapas, eg with olives and or capers, lemon wedges, peppercorn, red pepper. Perfect in pasta sauce (added at end when the sauce has cooled slightly) and also in fresh salads a nicoise or rice salad.
