This is a delicious, not too sweet cake, apple juice concentrate or agave could also be used in place of the maple syrup.
2 cups whole meal self raising flour
1 tsp cinnamon
600g berries, such as raspberries, loganberries, blueberries
½ cup light olive oil
½ cup maple syrup
¾ cup milk or soy milk
2 eggs
TOPPING
2 tbsp shredded coconut
2 tbsp chopped walnuts
1 tsp ginger
Preheat oven 180C.
Grease and line square baking tray.
Combine flour and cinnamon, stir in berries.
In a separate bowl, whisk together oil, syrup, milk and eggs, fold into flour mixture.
Spoon mixture into cake tin
Mix together topping ingredients, and sprinkle over batter.
Bake for 1 hour or until cooked when tested.
